ITALIAN PASTA WITH PEPPERONI & SAUSAGE SAUCE

And there was light.
On these italian pasta with pepperoni & sausage sauce, there isn’t a cloud in sight. So good to be frightening, it’s perfect to light up even the most greyish evening. It tastes like cottage and snowy trees, grandma and gingham tablecloth, mismatched forks and red wine in folksy glasses. It tastes good. A recipe stolen from my favorite aunt, this is the pasta we all want.

 

INGREDIENTS (serves 4)
  • 500 gr. of homemade orechiette pasta
  • 250 gr. of rough tomato sauce
  • 200 gr. of tomato sauce
  • 30 gr. of white onion
  • 2 italian sausages
  • 100 gr. of spicy salami (pepperoni)
  • 2 tablespoons of white wine
  • Sweet paprika and black pepper q.s.
  • A clove of garlic
  • Extra virgin olive oil, salt q.s.

 

PROCESS
  • Finely chop the onion and let it brown with a sprinkle of olive oil and a clove of garlic. Wait a few minutes and remove the garlic.
  • Break up the sausage and, brown it slightly with the onion for 5 minutes. Pour the white wine.
  • Once the wine has evaporated, cut the salami into small pieces then add to the sausage. Cook together for another 5 minutes on low heat.
  • Pour the tomato, salt and spices.
  • Let it simmer covered, add water only if necessary. After three quarters of an hour the sauce is cooked to perfection.
  • Cook the pasta. Drain the pasta and sautè into the sauce pan for a few minutes adding some pasta-cooking-water.
  • Serve garnished with a sprig of fragrant rosemary and grated Parmesan.
