Red. Chicken with peppers, the Italian recipe.

by Kristel Cescotto

Can you imagine a world in black and white?

The fervent imagination of me as a child did it. In addition to making a mix and match between biblical stories inculcated by Grandma Esther and those about the Big Bang & dinosaurs as a bedtime story to my mom and after a long scrutiny of the old black and white family photos, I came to the conclusion that at the time of my parents’ childhood the reality was anything but Technicolor. And that’s not all, because the belief that my father was born a chimpanzee also hovered in me. My ears had certainly also picked up something about Darwinian evolutionary theory, between Lego bricks and Barbie.

And that’s why, when I’ll become a parent, I’ll be careful about what my offspring will hear.
I can only imagine the face of my family when, summing up everything I had understood, at 3 years old I rattled off my vision of the world. Summarized in the following axioms:

  • God created the world by blowing up a big bomb;
  • the dinosaurs ate Adam and Eve;
  • when my parents were children the world was in black and white, the colors appeared then;
  • my grandmother gave birth to my father in the form of a monkey, later with the growth she evolved and lost some of her hair.

After all, how to blame me.

Anecdotes about my strangeness from an early age apart, I would also like to tell you something about the chicken with peppers.

Chicken with peppers is a quick, cheap and super easy second meat dish – even for the less able in the kitchen. Two main ingredients: chicken thighs and peppers.
Chicken is undoubtedly one of the most used meats in the kitchen, thanks to its versatility and delicacy that goes well with the vast majority of cheeses and vegetables (if you like, take a look at the recipe for fried chicken with corn flakes).
I love this recipe because it reminds me so much of my aunt Fernanda. Think of that story: two of my grandmother’s sisters (there were 7 of them, all women) at a young age, moved to Rome where they met two brothers from Paestum, who had also just moved. I do it short, the two sisters got married to the two brothers.
Just to say that the Italian recipe for chicken with peppers was stolen from Rome’s aunt by my mother – and I snatched it myself.

Chicken with peppers is one of the most delicious recipes in the Italian tradition.

The flavor is that of passion, a delightful red that never goes out of fashion.

CHICKEN WITH PEPPERS, THE ITALIAN RECIPE.

  • 2 red peppers
  • 1 red Tropea onion
  • 1 tomatoes
  • a clove of garlic
  • dry white wine q.s.
  • a glass of chicken broth
  • half a teaspoon of sweet paprika and a sprig of rosemary
  • extra virgin olive oil, salt and black pepper q.s.

HOW TO MAKE CHICKEN WITH PEPPERS

PROCESS

  1. Brown the chicken with the rosemary and a clove of garlic in a non-stick frying pan with a drizzle of oil. Before they burn, eliminates garlic and drizzle with wine. Allow it to evaporate over high heat.
  2. Season with salt, add the broth and cook covered for 15 minutes. Once evaporated, remove the chicken and place it in an oven dish.
  3. Cut the onion and the peppers into slices of half a centimeter, then the diced tomato. Skip the vegetables in the same pan as the chicken along with a few drops of oil. Flavor with paprika, salt and cook for a few minutes on a high heat.
    Transfer the vegetables into the pan with the chicken.
  4. Cook the chicken with peppers in a preheated oven at 170° C for half an hour (the first twenty minutes covered with tinfoil).Quick, wonderful, painless. Enjoy!
