Creamy chestnut soup with bacon crumble

This creamy chestnut soup is so velvety that looking in it, you can even see yourself – then I suggest you to close your eyes and make a wish. If all the mirrors were as loyal and gentle as this soup there would be no war. However, this soupy”mirror” has amazing properties that warms your soul. The chestnuts’ smoothness, the potatoes and the beautiful smell of bacon crumble: quick, easy, healthy. Once you have tasted it, you will make peace even with the most hateful mirror at home, the one that say “good” morning at 6 a.m. after a sleepless night. And even it will become more friendly, so much to be forgiven mornings of malice, handing you back an happy face and a thooty smile. After this recipe, the world looks so much better. Guaranteed to work 48 h.

 

INGREDIENTS (serves 4)
  • 250 gr of cooked chestnuts (without peel)
  • 500 gr of potatoes
  • 30 gr of onion
  • 800 ml of water
  • Natural vegetable broth q.s. (glutamate free, it hurts us)
  • Extra virgin olive oil q.s.
  • Salt, black pepper, rosemary and sage q.s.
  • 50 gr of bread
  • 100 gr of sliced bacon
  • 100 ml of cream and 3 tablespoons of grated Parmesan (optional, for an extra flavor)

PROCESS
  1. Make an horizontal cut on each chestnut, cook in oven at 250 ° C for about half an hour, remove the peel and keep aside.
  2. Peel the potatoes, so grate them.
  3. Fry the onion in a pan with little oil, add the potatoes, the pre-cooked chestnuts (leaving aside an handful, you’ll need it for the crumble) and cover with broth.
  4. Let it simmer for about 30 minutes.
  5. While the vegetables have been slowly simmer, make the crumble. Mince coarsely the chestnuts with bread and herbs. Sauté in a frying pan with a little oil until golden brown.
  6. Cut the bacon into strips and stew in a lightly greased hot pan;
  7. Once cooked, blend the “soup” of potatoes and chestnuts until it becomes a smooth cream and, at your leisure, also add the cream and Parmesan.
  8. Plate by pouring some soup, the crumble and bacon. A little oil, some sage leaves and I wish you an amazing weekend of pampering under a cosy plaid.
