Today I’m proposing you an alternative to your usual lunch sandwich at the office. It’s a Salad in a mason jar that, first of all, is very cool, it doesn’t make a thousand crumbs between the keys of your laptop, and last but not least, your hateful office colleague will surely envy you – and maybe, after giving her the recipe she will fill up on vitamins becoming more sympathetic. Only one rule: before you eat it, don’t forget to take a picture and put it up on Instagram… because if you stand to prefer the jar discomfort to the lunch box comfort let’s face it, is also for this reason: #saladinajar, and you will immediately feel a bit’ more like Gigi Hadid. Ah yes, it’s also vegan!
P.S .: However, it’s same delicious in a lunch box huh.
INGREDIENTS
- Pearled barley
- Dried grape
- Pine nuts
- Arugula
- Olives
- The zest of an organic orange, turmeric, salt, extra virgin olive oil q.s.
N.B .: I omette the doses because it is a “q.s.” recipe, that means at your leisure put a little bit of everything.

PROCESS
As first step put to boil salt water for barley and, as soon as it strts to boil, cook it for 30-40 minutes (follow the directions in the package). Now put in a cupo f water the raisins for ten minutes and then squeeze. Once the barley is coke, drain it and season with turmeric and some olive oil. Grate the orange zest, wash the arugula and drain the olives. Guys, now nothing more easy: you can choose to place all the ingredients in the jar “layered” or mix them in a bowl, your super healthy salad is ready to be enjoyed!
