Red fruit energy oat bars

Why does the mirror – that reverses the right with the left side – can’t reverses the top with the bottom? Did you ever think about it? I did – because I’m mad. It’s a paradox. After much consideration I got hungry. A normal snack would not be enough, here there was a need for better. I needed something that would give me superpowers. So given that I already did enjoy cholesterol the last few days, this week let’s have a snack that follows the poetic justice: red fruit energy oat bars, healthy, beautiful and nutrients. Say goodbye to snacks full of empty calories and say hello to this superfood – whose (few) calories are full of good things. And if you wanna know the answer to the paradox of the mirror, you’ll find it at the end of the recipe. *

 

INGREDIENTS
  • 50 gr of brown sugar
  • 50 gr of water
  • 200 gr of honey
  • 100 gr of blueberry jam
  • 100 gr of fresh blueberries (+ 25 gr. to decorate)
  • 100 gr of fresh raspberries (+ 25 gr. to decorate)
  • 150 gr of oatmeal
  • 50 gr of oat bran
  • 30 gr of sesame seeds
  • 70 gr of trail mix
  • 50 gr of puffed rice
  • 50 gr of puffed millet
  • Extra virgin oil to grease q.s.
  • White chocolate ganache q.s.

PROCESS
  1. In a non-stick small pan stir sugar with water, add jam and honey and let it simmer a few minutes, so set aside.
  2. Mix together all the dry ingredients in a large boule. Add the mixture of honey and jam, mix thoroughly with a wooden spoon until everything will become homogenous and compact.
  3. Now you just have to add the fresh blueberries and raspberries and stir for one last time.
  4. Line a baking pan (I used my oven baking tray) with parchment paper and grease it with oil.
  5. Pour the mixture and begin to level it, so that it covers the entire surface of the pan – up to 1 cm from the edge; grease another sheet of parchment paper and lay over, compact with the help of a rolling pin until the surface becomes regular.
  6. Remove the upper parchment paper and bake at 140 ° C for 35 minutes.
  7. Let it cool (but not at all) and cut your bars using a knife greased with oil, decorate with some berries and, to taste, to make it even more delicious with the white chocolate ganache.

 

* I was kidding. I googled, but I didn’t understand the solution. So if anyone wants to explain it to me, will be rewarded with favors and prizes.
