Soft and light grape cake

What is the color of happiness? A beautiful deep purple, like the grape that sweetens this soft and light cake, at breakfast, on a sunny Sunday. Has the noise of the most beautiful laughter, kept in the heart. The sound of thoughts floating in those who have the light mind.
Happiness is knowing that at home there’s the warmth of fireplace waiting for us, the smell of  fox grapes that still invades the kitchen. It’s the scent of this cake. Eating a slice in two laid down in the sofa, with only one fork. It has a mild flavour, the happiness. Like the flavour of the most beautiful emotions.
Happiness is look straight into each other’s eyes, licking your fingers, smile with the soul.

 

INGREDIENTS
  • 4 eggs
  • 250 gr. of caster sugar
  • 250 ml. of fresh cream
  • 150 ml. of corn oil
  • 270 gr. of flour
  • 80 gr. of cornstarch
  • 3 teaspoon of baking powder
  • A teaspoon of vanilla extract
  • Zest of one lemon
  • A pinch of salt
  • Butter to grease the pie pan
  • Powdered sugar to taste
  • Half a kilogram of fox grape
  • Two tablespoons of brown sugar
  • A tablespoon of lemon juice

PROCESS

Wash the grapes and, armed with patience, remove the seeds inside of each grape. Set aside a couple of handfuls – to put inside the cake dough – set the rest of the grapes in a nonstick pan with two tablespoons of sugar and the lemon juice. Let it simmer for half an hour, up to create a sort of jam. Put aside and move on to the cake.

Whisk the eggs with sugar and a pinch of salt, once you get a aerated foamy mixture add in the cream and continue beating, then add the corn oil and the lemon zest.

Sift together flour, corn starch, baking powder and vanilla extract so add a little at a time to the egg mixture. Finally add the “raw” grapes. Grease the pie pan with butter, pour inside the dough and bake at 180 °C for 45 minutes.

Remove from the oven and let it cool, spread the cake top with the fox grape sauce and, to taste, sprinkle with powdered sugar.
