HOW TO MAKE THE GUACAMOLE TOAST (AND LIVE HAPPILY)

Today I want to reveal how to make the guacamole toast (and live happily). Odd couple, made up of avocado and happiness. But a perfect combo. A super treat to give yourself on weekends, with a glass of wine in your hand and an house full of friends. I want to tell you that I just added this recipe to my mental list “favourite-confortfood-avocado”.

It has quite rightly earn a fully third place, just behind my favourite bagel (find the recipe here) and a perfect-made dragon roll uramaki. It’s on the podium, you need to try it. Among other things, the guacamole is really an easy to make recipe, apart from how nutritious and versatile is. I made it in a savoury version, enriched with onion and tomatoes, but nothing prevents you to combine with sweet ingredients. A vegetarian friend told me she use smashed avocado spread on bread for breakfast as a butter. I imagine it paired with peach jam, dried fruit and coconut flakes, but also with Nutella… Ok, just added everything to the mental list “healthy-recipes-to-try” – and please help me to exorcise the awareness of my self-diagnosed psychopathy revealing that also you kept a huge “mental-list” data file, constantly updated.

However: I’m glad to let you get on with the ingredients of my guacamole as a suggestion to unleash your creativity and bring the green on the table, even if out of the window it has change in a yellow-orange color.

 

INGREDIENTS (for an happy hour with 8 friends)

For the guacamole:

  • 2 ripe avocados (if they are not perfectly ripe you’ll struggle to get it to “cream” and the color, instead of being a nice bright green, will tend to yellow, like ours in pictures! But never mind, is equally good)
  • A quarter of a little red onion
  • The juice of half lemon
  • 4 cherry tomatoes
  • Extra virgin olive oil, salt, chilli q.s.
  • Slices of toasted homemade bread

My favourite match-ups, guacamole toast &:

  • Norwegian smoked salmon with poppy seeds
  • Cherry tomatoes pickled in extra virgin olive oil, garlic and basil with sesame seeds
  • Boiled egg slices with black pepper

PROCESS

How to make guacamole toast? Let’s go step by step.

  1. Cut the avocado in two, separate the two sides and remove the inner pit.
  2. Cut the flesh into small pieces and place them in a bowl, season with olive oil, salt, chilli (I use an oil flavoured with red hot chilli pepper from my plant, but will be fine also a pinch of chilli powder) and lemon juice.
  3. Smash the avocado with a fork until you’ll obtain a coarse puree.
  4. Chop in a blender the onion and the tomatoes, add them to smashed avocado and guacamole is ready.

Cut the bread into slices and toast them in a pan, once ready spread on toasts the guacamole so add the ingredients that inspire you the most. My favourite is guacamole toast with smoked salmon, Sara loves the one with boiled egg, and yours?

Ah yes, I also promised you the recipe of how to live happily. Mine is as simple as trivial: eat well as a ritual at every meal and enjoy the food, be grateful for what the universe gives you every single day, love constantly with an absolute love, not hurt anyone.
