Culture. Eat it

These cookies are healthy and good, and that in itself could be enough. Add to this the facts that they have a heavenly perfume and they’re so simple to make that you have to trust me and try them for your break moments. And with them, tea with friends will be even more special. They are a kind of “ugly but good”, a strange mix that produces a strange pastry… Not the usual cookie, here. Freshly baked, let it cool a few minutes, it is at its best: crisp outside and soft inside, a bit ‘like the Prince Charming we would like. And if he’s slow in coming, this cookie is a valid substitute, a comfort food that does not make you feel guilty… After all there are a lot of pears and goji berries in there, they make us so well that would be a shame not feeling the emotion!
INGREDIENTS (for approximately thirty biscuits)
- 2 pears
- 300 gr. flour 00
- 150 gr. of sugar
- 180 gr. of butter
- 1 egg
- 1 teaspoon baking powder
- 80 gr. of goji berries
- 90 gr. of corn flakes (I used the Kellogg’s Nice Morning)
- 2 pinch of ground cinnamon
- 1 pinch of salt

PROCESS
First step – Peel the pears and remove the core, then cut the fruits into small cubes. Put the little pieces in a pan with a tablespoon of sugar, cook over medium heat for a few minutes. When pears are ready remove from heat and set them aside. Preheat oven to 180°.
Second step – We have to prepare the mixture. In a bowl, mix together butter and sugar until they become soft and creamy. Then add the egg and work a little more to homogenize everything.
Third step – In another bowl combine the dry ingredients together: flour, baking powder, cinnamon and salt. Finally add the pears to the mixed powder, take care that the pears are coated well by the flour (so when the biscuits will be in the oven, the fruits will not fall in the bottom of the dough).
Last step – Combine the mixture to butter with dry ingredients, mix well and finally add the goji berries and cornflakes. Shape the cookies helping with a spoon and place them at a distance of a few cm from one another on a baking sheet covered with waxed paper. Bake for about 15 minutes, or until they will golden brown.
