Ricotta muffins with chocolate drops are a very soft and irresistible treats, which blossoms in all its infinite sweetness thanks to the caramelized bananas.

A simple and sweet recipe ready in no time, perfect for an healthy tasty snack or breakfast that contains all the ingredients needed to face the day with energy and a wave of positive vibes.

Did you know that the scientific term for identifying the only fruit of love is (the banana) “Musa Paradisiaca“. I’m shocked. That the ancients really knew a lot about nomen omen, an invention that can only be divine.
These ricotta muffins with chocolate drops really love the banana. And to me too. Its heartening sweetness combines with the festive and reassuring fragrance of dark chocolate, to pamper your stomach and spirit in one fell swoop.

RICOTTA MUFFIN WITH CHOCOLATE DROPS AND CARAMELIZED BANANAS – THE RECIPE

INGREDIENTS (FOR 12 MUFFINS)

  • 150 g of butter
  • 100 g of ricotta cheese
  • 50 g of milk
  • 150 g of brown sugar
  • 3 eggs
  • 200 g of plain flour
  • 100 g of corn starch
  • 8 g of baking powder
  • A teaspoon of vanilla extract
  • 100 g of dark chocolate drops
  • 1 banana
  • a pinch of salt

For the salted caramel:

  • 50 g of butter
  • 80 g of brown sugar
  • 50 ml of acacia honey
  • The tip of a teaspoon of salt

HOW TO MAKE EASY MUFFIN WITH RICOTTA RECIPE

PROCESS

  1. Start with the caramel that will make the muffins topping. Place the butter in a non-stick pan with the sugar, honey and a pinch of salt. Once you have obtained a caramel with a melting consistency, remove from heat and set aside.
  2. It’s time to move on to the dough. Assemble the soft butter with the sugar until obtaining a thick and airy cream. Add the sieved ricotta and mix well.
  3. Then combine one egg at a time, waiting for the previous one to be incorporated before adding the next one.
  4. Then add the flour, starch and baking powder. Mix everything until the mixture is uniform.
  5. Now incorporate milk and vanilla extract, stir until creamy and smooth. Finally, add the dark chocolate drops.
  6. Using a spoon, pour the dough into muffin cups, leaving one cm free from the edge. Finish with some banana slices and a teaspoon of caramel.
  7. Bake in a preheated oven at 180/170 ° C for 25 minutes (in any case, check that the cooking has taken place using the infallible toothpick test).Take it out, let it cool down and enjoy it.
